These pumpkin bars have the perfect taste of fall but watch out- they will be gobbled up fast!!  My kids loved having them in their lunchbox.

INGREDIENTS

16 Servings

4 scoops Vanilla KidzShake

1 can pumpkin puree (or 15oz of homemade puree)

3 eggs

1/2 cup coconut sugar

2 tbsp pumpkin pie spice

1 tsp cinnamon

1/4 tsp salt

1/2 tsp baking soda

1 cup oat flour

2 cups almond flour

1/2 cup dark chocolate chips (I used mini chips)

 

DIRECTIONS

Preheat the oven to 375 degrees (F).  Line a square baking dish (I used a 9in X 9in dish) with parchment paper and set aside.  In a mixer, whisk the eggs for just a few seconds.  Add pumpkin puree, KidzShake, sugar, baking soda, salt, pumpkin pie spice, and cinnamon.  mix on medium speed until combined.  Slow mixer speed and add the flours, mix until well incorporated.  Add chocolate chips and continue mixing until combined.  Using a spatula or spoon, transfer the mixture to the baking dish.  Bake for 25 minutes or until you can insert a toothpick and it comes out clean.  Don’t cut immediately, let cool first.  Enjoy!
